Chris McGowan will be a the Show on Sunday 12 November appearing in the Eat Like A Local session in the Big Kitchen.  

Biography

Chef Chris McGowan of Moira’s award-winning Wine & Brine originally trained close to home in the catering college in Portrush, then spent two decades in London, working in senior positions in some of the country’s most prestigious restaurants.

Beginning with a year in Bruno Loubet’s L’Odeon on Regent Street, Chris spent the next five years with Gary Rhodes at The Greenhouse in Mayfair and then at City Rhodes, as well as helping launch Rhodes in the Square in Pimlico.

A two-year stint with Pierre Koffmann at La Tante Claire in Chelsea followed before Chris was made head chef at Richard Corrigan’s iconic London eatery, Lindsay House. He went on to spend almost thirteen years in total as chef director for the group, overseeing Bentley’s on Swallow Street in the city, the Oyster Bar at Harrod’s and Corrigan’s in Mayfair.

That experience with Corrigan’s nose-to-tail philosophy and interest in old cooking methods certainly influenced Chris’s own style and ethos, as well as the choice of Wine & Brine as a name. With a very clean, simple approach on the plate, the technical aspect of Chris’s food tends to happen in the many levels of processes beforehand, adding multiple layers of flavour, flair and ingenuity.

Since opening the restaurant with his wife Davina in late 2015, three-time Great British Menu contender chef Chris McGowan has collected multiple awards for Wine & Brine, winning the Best Local Restaurant in the UK in the 2017 awards by the prestigious Waitrose Good Food Guide, who described the restaurant as “a role-model of its kind”.

Awarded a Bib Gourmand in the 2017 edition of the Michelin Guide, Wine & Brine was also shortlisted for The Caterer’s Menu of the Year award, won Best Restaurant in Northern Ireland in the National Restaurant Awards 2017 and made the Top 100 Restaurants in the UK in the same awards, coming in at number 84 on that prestigious list.

Show-casing the best of produce served in a contemporary way, featuring the pickling, brining and fermenting of food, McGowan returned to Northern Ireland in 2015 after honing a razor sharp and natural culinary talent in London.
