Queen of Baking Mary Berry would have been live on stage at the Show this year, cooking and sharing top tips. We will certainly miss seeing her, and expect you do too, so she was delighted to be able to answer the top 10 questions submitted by our visitors and followers – take a look in case you are one of the lucky ones!

1.    Why does my shortcrust pastry crumble when I take it out the fridge to roll? @OH_LIV
Because the pastry would have a little dry and would have needed a little more water on making.  Make sure the pastry is well wrapped before it is chilled too, so it does not dry out.

2.    Do you leave butter out to come to room temp? Can it get rancid? @4FOOD4TRAVEL
If using butter for baking it needs to be soft, but to keep butter out of the fridge, in warm weather for any length of time would be rancid in a couple of weeks.

3.    How do I get my cheese scones to rise? @GEMMAQ222
HI Gemma – use a good recipe, it must have extra raising agent than for normal baking.

4.    How do you keep candied fruit from sinking in a cake? @SHUETOTHEFENG
Wash off any excess sugar or syrup, dry thoroughly and in the case of cherries, quarter them and mixed peel chop coarsely.  If chopping, chop before washing.

5.    How do you make meringue with a soft centre and crisp outside? @DOHERTY2140
To make meringue with a soft centre, do not overcook or dry out in the oven.  In the case of a Pavlova add a little vinegar and cornflour to the raw meringue mix.

6.    When I can’t get hold of caster sugar – what I can use? CHARLIE DULSON
If you are desperate, put granulated sugar and whizz for a few minutes until it is finer, like the texture of caster sugar.

7.    What’s your favourite dessert using fresh summertime fruit? @MONICAVOELKNER 
Oh I love a summer pudding and serving extra summer fruit compote on the side, with a good dollop of cream.

8.    What’s your favourite cake to bake? IMELDA CHARBONNNEAU / @TAHMINAC1
Lemon drizzle cake.  I first made it in the 1960s and the family still love it.

9.    What’s your favourite celebration (Easter, Christmas etc.) and your favourite dish you make for it? @MAYA_3333_
I do love Christmas with the family.  A glazed ham is always such a treat and plenty to share and to have after Christmas too.

10.    What’s your favourite Sunday lunch? @MARY__F__S
Slow roasted shoulder of lamb with fresh mint sauce.

11.    Can you give some help to people who live alone for recipe meals for one? POLLY PERKIN
Half the recipe and freeze the rest for next week.  It’s a lovely feeling being organised and having a day off from cooking one day in the future.

12.    Did you love cooking at a young age? @ABBIEFOSTER_
No it was in the war and ingredients were short so I did not start cooking until senior school, and then I loved it.

13.    When did your passion for baking and cooking begin? And what has kept you going over the years? @HOMEMADE_TASTE 
I had a wonderful teacher, Miss Date who was skilled and encouraged me to do well.

14.    What is the best investment to make (kitchen utensil/ appliance/ pot/ pan/ knife) etc? @SCHWENLI7089
The best investment is to have good knives, something you use every day and keep them sharp.  I now have a knife block with a built-in sharpener and it is a godsend.  A good pair of digital scales for baking.
