American Style Pancakes With Bacon, Popcorn and Maple Syrup

Dry
135g self raising flour
2 tbsp caster sugar
1 tsp baking powder

Wet
135g milk
1 egg
Pinch of salt

Cooked smoked streaky bacon
Maple syrup
Popcorn kernels
Coconut oil

Start by roasting off the streaky bacon.
In a pan, add your coconut oil and popcorn kernels and leave to pop away.
Mix together your dry ingredients, add your wet ingredients and whisk until combined.
In a warm pan, add some oil and some butter and add the pancake mixture.
Cook until golden, adding some bacon fat for extra flavour.
Add the popcorn on the side and bacon on top of the pancake stack, drizzle over some maple syrup and enjoy!
