Cranberry Walnut and Orange Flowerpot Loaves

Ingredients

400g strong white flour + extra to dust 
1 ½ tsp fine salt 
1 tsp honey 
50g dried cranberries, chopped 
50g walnuts, finely chopped 
1 tsp orange, zest  
7g fast action yeast 
Olive oil for brushing 
Extra flour for dusting 

To decorate:  
Red or green ribbon or coloured string to tie around cooked flowerpots 

Method

  1. Heat oven to 200C fan. Brush the insides of the pots with oil and line with parchment or large muffin cases.
  2. In a bowl mix the flour with the salt. Drizzle in the honey the cranberries nuts and zest and mix lightly. In a jug mix the yeast with 350ml tepid water then pour this into the dough bringing it together gently either with the spatula or your hand to form a rough doughCover with cling film and leave in a draught free area to double in size for around 2 hrs. Tip onto a lightly floured surface and fold into itself, kneading gently a few mins then shape and cut into 4 balls and place each into the lined pots.
  3. Cover with a slightly damp muslin or linen cloth and allow to rise again for 1 -2 hrs. Brush the tops with olive oil sprinkle with a little flour place on a baking tray and bake for 25-30 mins until risen and golden. Tip out and allow pots to cool, tie with festive ribbon or string and serve the bread warmed through in the pots.  

     

    TIP: You’ll need 4 small flowerpots (mine are 7 ½ cm high) treat them before baking – brush with oil and bake in hot oven 30 mins or so, allow to cool then wash.
