Prawn Toasts with Chilli Jam

Ingredients

For the Prawn Toasts
300g raw king prawns, peeled
 
½ egg white  
2 slices white bread 
50g sesame seeds 
2 tbsp vegetable oil 

 

For the jam 
4 chillies, diced, still seeded 
50g caster sugar 1 tbsp white wine vinegar 
1 lemon grass, diced finely 
1 tsp fine salt 

Method

  1. Place the prawns, egg white and a pinch of salt and pepper into a food processor and blitz until a rough paste. 
  2. Spread over the bread and then dip in the sesame seeds. Shallow fry in vegetable oil until crisp on both sides. Cut into 4 triangles. 
  3. Meanwhile, pop all the ingredients for the jam into a saucepan and bring to the boil, then take of the heat to cool. Serves all together on a platter.
