Ingredients

For the syrup 
250g fresh cranberries or frozen cranberries 
80g granulated sugar 
80g water 

For the decorations 
8 marshmallows, large, white 
16 cloves, for eyes 
3 – 4 sprigs fresh rosemary, cut in pieces
(approx. 3 – 4cm), for antlers
 
8 fresh cranberries, for noses 

To assemble 
300g ice cubes 
1 litre ginger ale, chilled 

Method

  1. Place cranberries, sugar and water in mixing bowl then, with simmering basket in place of measuring cup, cook 4 min/100°C/speed 2. Strain through a fine sieve into a bowl then set aside to cool (see tip). Meanwhile, make decorations. 
  2. To make Rudolph’s, take 1 marshmallow and insert 2 cloves for eyes, then 2 pieces of rosemary for antlers, using a skewer to help create a hole if necessary. Attach 1 cranberry to half a cocktail stick for the nose, add to marshmallow then thread onto a small wooden skewer. Set aside then repeat, making 4 in total, one for each glass. Once syrup is cool and when ready to serve, place ice in mixing bowl and crush 10 sec/speed 10. Scrape down sides of mixing bowl with spatula.
  3. Add reserved cooled syrup and mix 10 sec/speed 4.
  4. Add 350g ginger ale and mix gently with spatula. Divide between cocktail glasses and top up with remaining 150g ginger ale.
  5. Place a Rudolph marshmallow skewer in each glass then serve immediately. 

     

    TIP 
    The syrup can be made ahead then frozen. Alternatively, make up to 2 days in advance and keep chilled in fridge until needed.
