Carote Al Forno Con Erbe - Baked herby carrots

Simple to prepare, these baked carrots infused with herbs make a wonderful and different way to serve this popular root vegetable.  It makes an ideal accompaniment to main courses especially roast meats.  If you prefer to keep the carrots whole the cooking time will need to be increased.

Ingredients

2 x shallots, finely sliced  

1 x celery stalk, finely chopped

500 gr carrots, peeled & cut into large chunks  

2 x tablespoons evo & extra for drizzling

2 x bay leaves

3 x sprigs of thyme

8 x sage leaves

2 x tablespoons parsley, roughly chopped   

salt & pepper

150 ml vegetable stock

Method

Preheat the oven at 180 degrees centigrade. 

Place the shallots and celery in an ovenproof dish and place the carrots on top. 

In a bowl combine the evo, salt & pepper and pour over the carrots.  Scatter with the herbs and pour over the vegetable stock.  Leave to infuse for about 15 minutes. 

Cover with foil, place in the oven and bake for 1 hour.  Remove the foil, drizzle with some evo and continue to cook for 15 minutes.  Remove from the oven, leave to rest for 5 minutes and serve.
