Growing up in Northern Ireland, as a child, Matthew was most likely to be found in his mother’s Kitchen cooking his favourite Swiss roll or licking a spatula covered in butter cream. After a long summer working in some of Northern Ireland’s costal restaurants, Matthew moved to Belfast to join the team at Paul Rankin’s signature restaurant Roscoff. Under Paul’s tutelage Matthew learned a great deal about Northern Ireland’s excellent local produce. It was there he developed a true love for cooking and passion for the stove. Later Matthew would move to Chef Proprietor Andy Rea’s multi award winning Mourne Seafood bar in Belfast. Under Andy’s watchful eye Matthew developed into a well-rounded and thoughtful chef. After a short stint cooking in Bangkok, Thailand, Matthew found himself in Far north Queensland, Australia. It was there that he truly came into his own and spent 4 valuable years feeling out his own unique style and honing his technique, before returning to Northern Ireland in 2016. Matthew is now the Head Chef at The Old Inn, Crawfordsburn. A beautifully quaint 17th century thatched countryside Hotel, recently awarded Northern Ireland’s AA hotel of the year 2017.
